Pumpkin Protein Bars

INGREDIENTS
½ cup old fashioned oats, ground
4 scoops vanilla whey or plant protein powder
1 Tbsp pumpkin pie spice
1 tsp baking powder
1 ¼ pumpkin puree
½ cup nonfat plain greek yogurt
2 eggs
2 tsp vanilla extract
3 tsp Stevia
2 Tbsp Enjoy Life mini morsels

DIRECTIONS
Preheat oven to 350*. Line an 8 inch square pan with foil, spray with nonstick cooking spray.
In a medium bowl combine the ground oats, protein powder, pumpkin pie spice and baking powder.
In another bowl whisk the pumpkin, yogurt, eggs, vanilla and stevia until blended.
Add the pumpkin mixture to the oat mixture, stirring until blended. Stir in chocolate chips. Spread into pan.
Bake for 25 minutes or until set in the middle. Cool completely and cut into 12 squares.
